Lydias Turkey Chili

Without beans, serve stirred together with brown rice.  

a package of the fatty ground turkey

1 tablespoon butter

2 large tomatoes – finely chopped

2 medium onions – finely chopped

3 yellow or and orange peppers – finely chopped

cilantro – one bunch – rinsed and chopped

adobo pepper spice

salt

In a really large sauce pan sauté together the peppers, onions and tomatoes in butter until they release there liquid, cover and sweat them for twenty minutes

Remove cover and add turkey, cilantro, adobo and salt to taste

Mix the turkey in chopping down the chunks until they are the size of the vegetables.

This process takes a half an hour of and and off chopping, covering , uncovering.   Trust your instincts and do it by feel.  When the mixture starts to dry out its ready to serve.

i like it spicy and mixed with almost equal part brown rice to serve.
